Ingredients:

    • 2 large potatoes, peeled and cut into French fry shapes

    • 4 large eggs
    • 1/2 onion, chopped
    • 1 tomato, chopped   
    • 1 green chili pepper, chopped (optional)   
    • 1 tablespoon chopped cilantro   
    • Salt and pepper to taste
    • Vegetable oil for cooking   

Instructions:

  1. Make the Fries:

    • Heat the oil in a deep pot over medium heat.
    • Carefully add the potato fries and fry until golden brown and cooked through.
