Ingredients:

  • 2 ripe plantains   
  • 1/2 cup roasted peanuts
  • 1/4 cup palm oil
  • 1 onion, chopped
  • 1 scotch bonnet pepper, chopped (optional)
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Water

Instructions:

  1. Boil the plantains in water until they are soft.
  2. Mash the plantains in a bowl.
  3. Add the palm oil, onions, scotch bonnet pepper, ginger, cumin, salt, and black pepper to the plantains.
  4. Stir until well combined.
  5. Serve with roasted peanuts.   

Tips:

  • You can add other ingredients to your Etor, such as chopped tomatoes, peppers, or smoked fish.
  • Etor is best served hot.
  • You can store leftover Etor in the refrigerator for up to 3 days.
