Ingredients:

  • 1/4 cup olive oil

  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron
  • 4 cups fish broth
  • 8 ounces fideuà noodles
  • 1 pound shrimp, peeled and deveined
  • 1/2 pound mussels, scrubbed
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large paella pan or skillet over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic and bell pepper and cook for 2 minutes more.  
  4. Stir in the diced tomatoes, smoked paprika, and saffron.
  5. Pour in the fish broth and bring to a boil.
  6. Add the fideuà noodles and cook for 10 minutes, or until the noodles are almost cooked through.
  7. Add the shrimp and mussels and cook for 5 minutes more, or until the seafood is cooked through.
  8. Stir in the parsley and season with salt and pepper to taste.
  9. Serve immediately.
