Fufu recipe

Ingredients

  • 4 cups of cassava, peeled and cubed
  • 2 ripe plantains, peeled and sliced
  • 1 teaspoon salt
  • Water

Equipment

  • Large pot
  • Wooden spoon or mortar and pestle

Instructions

  1. Place the cassava and plantains in a large pot and cover with water. Add salt and bring to a boil. Cook until the vegetables are tender, about 20-25 minutes.
  2. Drain the vegetables and transfer them to a large bowl.
  3. Using a wooden spoon or mortar and pestle, pound the vegetables until they form a smooth, dough-like consistency. Add a little bit of the cooking water if the mixture is too dry.   
  4. Continue pounding until the fufu is smooth and elastic. This may take some time and effort, but the result is worth it!
  5. Serve the fufu warm with your favorite stew or soup.

Here are some tips for making perfect fufu:

  • Use ripe plantains for a sweeter flavor.
  • If you don’t have a mortar and pestle, you can use a food processor to pound the vegetables.
