Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon curry powder
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 (14.5 ounce) can diced tomatoes, undrained
- 6 cups beef broth
- 1 cup groundnuts (peanuts)
- 1 cup chopped carrots
- 1 cup chopped potatoes
- 1/2 cup chopped green beans
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute more.
- Stir in the curry powder, turmeric, and cayenne pepper. Cook for 1 minute more.
- Add the diced tomatoes and beef broth. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
- Add the groundnuts, carrots, potatoes, and green beans. Simmer for 15 minutes more, or until the vegetables are tender.
