Instructions:

  1. Prep the ingredients: Wash the rice thoroughly. Blend the tomatoes, bell pepper, scotch bonnet pepper (if using), garlic, and ginger into a smooth paste.
  2. Sauté the onions: Heat the oil in a pot over medium heat. Add the chopped onion and sauté until softened and slightly browned.
  3. Make the sauce: Add the tomato paste and cook for a few minutes, stirring constantly. Then, add the blended tomato mixture and cook for 10-15 minutes, stirring occasionally, until the oil separates from the sauce.
