Kenkey, a Ghanaian staple food, is a delightful corn dumpling that’s as fun to eat as it is to say! Imagine a slightly tangy, slightly sweet, and oh-so-satisfying ball of flavor – that’s kenkey in a nutshell (or should we say, in a corn husk?).   

This unique food is made from fermented corn dough, which gives it a distinctive taste and texture. Think of it as the sourdough bread of Ghana, with a fascinating fermentation process that adds depth and complexity to its flavor.   

Kenkey is a versatile dish that can be enjoyed in many ways. It’s often paired with fish, stews, or soups, making it a hearty and fulfilling meal. You can even have it on its own as a snack!   

One of the reasons kenkey is so famous is its cultural significance. It’s a traditional food that has been passed down through generations, deeply rooted in Ghanaian heritage. Kenkey is a symbol of community and celebration, often shared during festivals and gatherings.

Ingredients:

  • 2 cups cornmeal
  • 1 cup cassava flour
  • 1 teaspoon salt
  • 2 cups water
  • Banana leaves, for wrapping

Instructions:

  1. In a large bowl, combine the cornmeal, cassava flour, and salt.
  2. Gradually add the water, mixing until a smooth dough forms.
  3. Cover the bowl and let it sit for 2-3 days, allowing the dough to ferment.
  4. After 2-3 days, the dough should have a slightly sour smell and taste.
  5. Divide the dough into small portions.
  6. Wrap each portion in a banana leaf, forming a tight ball.
  7. Steam the kenkey for 1-2 hours, or until firm.
  8. Serve hot with your favorite stew or sauce.
