Ingredients:
- 1 pound beef or goat meat, cut into 1-inch cubes
- 1 large onion, chopped
- 2 tomatoes, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 scotch bonnet pepper, chopped (optional)
- 1 tablespoon ground ginger
- 1 tablespoon ground cumin
- 1 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper (optional)
- 1/4 cup vegetable oil
- 1/4 cup water
- Salt to taste
Equipment:
- Large bowl
- Grill or barbecue
Instructions:
- In a large bowl, combine the beef or goat meat, onion, tomatoes, bell peppers, scotch bonnet pepper (if using), ginger, cumin, turmeric, cayenne pepper (if using), vegetable oil, water, and salt. Mix well and marinate for at least 30 minutes, or preferably overnight.
- Preheat your grill or barbecue to medium heat.
- Thread the meat onto skewers and grill for 10-15 minutes, or until cooked through.
- Serve hot with your favorite side dishes.
Tips:
- If you don’t have a grill or barbecue, you can cook the muchomo in a skillet over medium heat.
- You can add other vegetables to the muchomo, such as carrots, potatoes, or beans.
- If you want a richer flavor, you can add a can of coconut milk to the marinade.
- Muchomo is traditionally served with ugali, a type of cornmeal porridge.
