Muufo Recipe

Ingredients:

  • 2 cups maize flour (or cornmeal)
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 1/2 cups warm water
  • 2 tablespoons oil

Instructions:

  1. In a large bowl, mix the maize flour, all-purpose flour, salt, and sugar.
  2. Gradually add the warm water, mixing until a smooth dough forms.
  3. Cover the bowl and let the dough rest for 30 minutes.
  4. Heat a large skillet or griddle over medium heat.
  5. Add the oil to the skillet.
  6. Divide the dough into small balls.
  7. Roll out each ball into a thin circle.
  8. Cook each circle on the skillet for 2-3 minutes per side, or until golden brown.
  9. Serve warm with your favorite stew, soup, or topping.

Tips:

  • If you don’t have maize flour, you can use cornmeal instead.   
  • Be careful not to overcook the Muufo, or it will become dry and hard.
  • You can add other ingredients to the dough, such as chopped onions, garlic, or spices.   
  • Muufo is best served fresh, but it can be stored in the refrigerator for up to 3 days.
