Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 pound lamb or chicken, cut into bite-sized pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 1 cup basmati rice
  • 2 cups water
  • 1/4 cup raisins
  • 1/4 cup caramelized onions

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the lamb or chicken and cook until browned on all sides, about 5 minutes.
  3. Add the cumin, coriander, turmeric, black pepper, cardamom, cinnamon, cloves, and salt. Cook for 1 minute more.
  4. Add the water and bring to a boil. Reduce heat to low, cover, and simmer for 1 hour, or until the lamb or chicken is tender.
  5. Add the rice and water to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the rice is cooked through.
  6. Stir in the raisins and caramelized onions. Serve hot.
