This popular street food in Kampala is like a chicken celebrity. It’s marinated in a blend of local spices, giving it a unique and tantalizing flavor. The spices vary, but often include paprika, garlic, ginger, and a touch of chili for a little kick.

The chicken is cooked until it’s golden brown and juicy. The skin becomes crispy and irresistible, while the meat remains tender and flavorful. It’s usually served with a side of chips or matoke, a starchy dish made from steamed and mashed green bananas.

Ingredients:

  • 1 whole chicken
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon ginger powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 green bell pepper, chopped

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a small bowl, combine paprika, garlic powder, ginger powder, chili powder, salt, and pepper.
  3. Rub spice mixture all over chicken.
  4. Place chicken in a roasting pan.
  5. Drizzle olive oil over chicken.
  6. Roast chicken in preheated oven for 1 hour and 15 minutes, or until chicken is cooked through and juices run clear.
  7. While chicken is roasting, sauté onion, tomatoes, and bell pepper in a skillet over medium heat until tender.
  8. Serve chicken with sautéed vegetables.
