Ingredients:
- 1 whole chicken
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon ginger powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 green bell pepper, chopped
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- In a small bowl, combine paprika, garlic powder, ginger powder, chili powder, salt, and pepper.
- Rub spice mixture all over chicken.
- Place chicken in a roasting pan.
- Drizzle olive oil over chicken.
- Roast chicken in preheated oven for 1 hour and 15 minutes, or until chicken is cooked through and juices run clear.
- While chicken is roasting, sauté onion, tomatoes, and bell pepper in a skillet over medium heat until tender.
- Serve chicken with sautéed vegetables.
